ABOUT CHEF VICTOR SPICER
Elk Valley Catering is a family run business headed by executive chef, Victor Spicer, a Red Seal chef with over twenty years of experience in kitchens all over the world. He believes food brings people together and excellence builds memories.
Born and raised in Calgary, Victor began working in kitchens as early as he could, for he was drawn to cooking from a young age. Victor loves good food and has a natural gift for creating unique recipes. He attended a three-year culinary program at SAIT and acquired his Red Seal, learning from the most accredited chefs in the west. Upon graduation and with a taste for travel, Victor moved overseas, working as a chef from coast to coast in five-star restaurants across Australia. Victor’s skills were refined even more during his travels abroad and his style reflects his time spent in France, Japan and Thailand.
When he was not in the kitchen, Victor was beginning a love affair with the mountains. He learned to snowboard in Australia and moved to Fernie upon his return to Canada, well traveled and well seasoned. Victor fell in love with Fernie after one season and never left. Fernie is now home. With his culinary prowess and passion for the slopes, Victor graciously took the opportunity as Executive Chef and kitchen manager at Cirque, a fine dining restaurant located in Lizard Creek Lodge operated by Fernie Alpine Resort. During his time here, he also developed and managed the catering department for the resort. Overseeing the catering for weddings, private events, and corporate retreats.
Victor has always loved connecting with people through food, and when the opportunity arose, inn partnership with his wife Karlea Spicer, and through collaboration with the Fernie Mountain House, Victor was able to turn his dream of starting his own catering company into a reality. Having the opportunity to meet and engage with so many wonderful and diverse people while creating a unique dining experience is such a gift and really makes him appreciate his profession. A devoted father and husband, he uses his passion for family life as his inspiration for creating memorable events. When you sit at his table, you are family.
