About Chef Victor Spicer
Elk Valley Catering is led by Executive Chef Victor Spicer, a Red Seal chef with over twenty years of international experience. Born in Calgary and trained at SAIT, Victor honed his craft in five-star kitchens across Australia, France, Japan, and Thailand before settling in Fernie—a place that quickly became home. While leading the culinary team at Cirque in Lizard Creek Lodge and developing its catering program, Victor founded Elk Valley Catering with his wife, Karlea. Blending global flavours with local inspiration, he brings people together through food, creating memorable dining experiences rooted in passion, family, and community.
