Prospector Gin, Fresh Lemon Juice, Simple Syrup, Sparkling Wine & Fresh Lemon Peel

1st course: Miso French onion soup

Garlic croton and Gruyère cheese 

Cocktail pairing: Nori Negroni
Nori-Infused Prospector Gin, Sweet Vermouth, Campari & Nori Seaweed

2nd course: Duck Confit salad

Arugula, pomegranate, pickled golden beets and walnuts with aged goat cheese, apple cider vinaigrette

Prospector Gin, Fresh Lemon Juice, Simple Syrup, Soda and Lemon

3rd course: Bison Short Ribs 

Parsnip puree, maple glazed baby carrots, fried shoestring potatoes, rosemary demi

Fernie Fog, Whiskey, Ruby Port Wine, Fresh Lemon Juice, Demerara, Foamer & Rose Petals

4th course: Chocolate sponge cake

Dehydrated chocolate mousse, white chocolate chantilly, Cherries, cocoa nibs crumble, Fernie fog ice cream
